

Fennel and Pea Salad with Vetta Ready Pasta Classic Macaroni

Prep time: 10 minutes, Cook time: 60sec serves 1
- 150g Vetta Ready Pasta SMART Macaroni
- 3 tbs olive oil
- 1 garlic clove (minced and added to olive oil)
- 1 tbs red wine vinegar
- 1/3 cup frozen peas (placed in boiling water until soft)
- 1 handful fresh green oak lettuce
- 1 small handful fresh fennel thinly sliced
- 1 tsp freshly squeezed lemon
- Salt & pepper for seasoning
- Cook pasta as per packet instructions, in microwave or stovetop and then run under cold water until cool.
- Add minced garlic, lemon, red wine vinegar and olive oil, stir and set aside
- Lay a bed of lettuce in a large bowl
- Add all ingredients, lightly toss through
- Drizzle your dressing over
- Season with salt and pepper
