Fennel and Pea Salad with Vetta Ready Pasta Classic Macaroni

Prep time: 10 minutes, Cook time: 60sec serves 1

  • 150g Vetta Ready Pasta SMART Macaroni
  • 3 tbs olive oil 
  • 1 garlic clove (minced and added to olive oil) 
  • 1 tbs red wine vinegar
  • 1/3 cup frozen peas (placed in boiling water until soft)
  • 1 handful fresh green oak lettuce
  • 1 small handful fresh fennel thinly sliced 
  • 1 tsp freshly squeezed lemon
  • Salt & pepper for seasoning
  1. Cook pasta as per packet instructions, in microwave or stovetop and then run under cold water until cool.
  2. Add minced garlic, lemon, red wine vinegar and olive oil, stir and set aside
  3. Lay a bed of lettuce in a large bowl
  4. Add all ingredients, lightly toss through
  5. Drizzle your dressing over 
  6. Season with salt and pepper
