

Salmon and Fresh Dill Salad with Vetta Ready Pasta Classic Penne

Cooking time: 5 minutes, serves 1
- 150g Vetta Ready Pasta SMART Fibre Penne
- 100g John West Salmon in Olive Oil Tin
- 40g kidney beans
- 1 hand full baby spinach
- 1/4 fresh lemon squeezed
- Salt and pepper for seasoning
- Fresh dill for garnish (finely chopped optional)
- Cook pasta as per package directions (60 seconds in the microwave!) and set aside
- Lay baby spinach in large bowl
- Add salmon, pasta, kidney beans and lightly toss
- Squeeze fresh lemon over, add fresh dill and season with salt and pepper
