Salmon and Fresh Dill Salad with Vetta Ready Pasta Classic Penne

Cooking time: 5 minutes, serves 1

  • 150g Vetta Ready Pasta SMART Fibre Penne
  • 100g John West Salmon in Olive Oil Tin
  • 40g kidney beans
  • 1 hand full baby spinach
  • 1/4 fresh lemon squeezed 
  • Salt and pepper for seasoning
  • Fresh dill for garnish (finely chopped optional)
  1. Cook pasta as per package directions (60 seconds in the microwave!) and set aside
  2. Lay baby spinach in large bowl
  3. Add salmon, pasta, kidney beans and lightly toss
  4. Squeeze fresh lemon over, add fresh dill and season with salt and pepper
