Balsamic Fetta Salad with Vetta Ready Pasta Fibre Penne

Cooking time: 2 minutes, serves 1
- 150g Vetta Ready Pasta SMART Fibre Penne
- 30g reduced fat fetta cheese
- ¼ cucumber, chopped
- 5 cherry tomatoes, halved
- ½ capsicum, chopped
- ¼ onion, sliced
- Small handful spinach
- 1 tsp of balsamic glaze
- ½ lemon, juiced
- Salt and pepper to taste
- Cook pasta as per package directions (60 seconds in the microwave!).
- Mix veggies with feta cheese and cooked pasta.
- Add lemon juice, salt, and pepper to taste and stir through to cover all veggies.
- Serve and drizzle with the balsamic glaze! Garnish with basil leaves and enjoy!
