Dino Pesto with SMART Fibre Dinosaurs Kids Pasta
Cooking time: 20min, serves 4
- 500g Vetta SMART Fibre Dinosaurs Pasta
- 200g cherry tomatoes
- 1 bunch fresh spinach
- 1 bunch fresh basil
- 3 cloves garlic, lightly roasted
- 100g raw cashews
- 200ml olive oil
- ½ lemon squeezed
- Parmesan, to serve
- Cook pasta according to packet instructions.
- Spinach, garlic, basil, olive oil, cashews, salt and pepper into a food processor. Blend until roughly smooth adding extra olive oil to help consistency and salt and pepper to taste.
- Cut cherry tomatoes into halves.
- Add pesto and cherry tomatoes to your pasta, and stir through thoroughly.
- Serve with grated parmesan.
